🍽️ Ingredients
- 3 large potatoes (Asterix or Russet type)
- Salt to taste
- Oil for frying
👨🍳 Instructions
- Peel the potatoes and grate them lengthwise on a coarse grater or use a mandoline slicer.
- Wash the grated potato in running water to remove excess starch.
- Place the potatoes in a bowl with ice water and ice cubes for about 10 minutes.
- Remove and dry the potatoes very well using a clean towel or paper towels (the drier they are, the crisper they get).
- Heat plenty of oil in a pan over medium-high heat.
- Fry the potatoes in small batches so as not to lower the oil temperature, stirring gently until golden brown.
- Remove with a slotted spoon, let drain on paper towels, and season with salt to taste while still hot.
💡 Chef's Secret
To ensure they turn out very dry and crispy, soak the sliced potatoes in ice water for 10 minutes and dry them very well with a clean dish towel before frying.
